Caseificio San Martino
17 Settembre, 2008Siamo ripartiti !
Ieri, io e Michele Marziani siamo ripartiti con il nostro viaggio fra le varie realtà dei Sovversivi del Gusto.
La prima tappa è stata il Caseificio San Martino a Saluzzo in provincia di Cuneo.
Questo caseificio è una tradizione di famiglia tramandata fino ad oggi dal papà Germano e che prosegue con i figli Giacomo e Marta.
La lavorazione parte dalla selezione del latte, fornito esclusivamente da allevatori della zona che nutrono le loro vacche di razza piemontese ad erba e fieno, si prosegue con la selezione del caglio e dei fermenti fatti in casa, il resto sta alle sapienti mani di Germano e dei suoi collaboratori.
Bra duro, Paglierina di capra, Sola, Raschera, Toma piemontese, Blu vaccino a doppia pasta… questi sono alcuni dei loro formaggi.
